One name I'm familiar with on this list is Rudy Burgess WR from Arizona State (again, seeing as how I go to ASU). I liked him at ASU, he's a very versatile player. I think he even played some corner at times with ASU and has good hands. Could make the team as a special teamer. Not all that tall though, only 5'10 and I think he only ran a 4.5 40 (don't quote me on that).
Call me ASU biased but I'll be pulling for him to make the team.
On a side note, I'm always ragging on the Titans fans and VY but this time it is just plain hilarious what one said. Heres a link.

I agree Mouf, he is small and doesn't have speed. He's not a Mojo that makes up for his lack of size with power and speed. He probably won't make the team.

As a Tulsa University fan, I was glad to see you guys pick up Paul Smith as a free agent. I know people probably think his gaudy stats were because he was a system QB, he's pretty tiny, and his 40 time was slow, but don't write this guy off. He plays much quicker than his 40 times, and his arm really isn't that bad. Hope he can make the team, and good luck in '08!

Basically at the end of every draft teams go back and analyze what they got. They look at what they needed and what they got. If they still need something, they can pick guys up from this big pool of players that didn't get drafted, but are still eligible for the NFL. You don't draft them, but it's a rat race to sign the good ones to a contract so you can see if he's what you need. If you're undrafted , it pretty much means you're an unrestricted free agent and you can sign a contract with any team.
it's a small number of undrafted free agents that sign with teams and are actually gems. But the list includes people like Warren Moon, Dick Lane, Antonio Gates, Rod Smith, Kurt Warner, Adam Vinatieri, John Randle, and I'm pretty sure Tony Romo was undrafted. So was Cris Carter.
As far as the Jaguars are concerened there are a couple good defenders on the undrafted list. But it doesn't look like we tried for any of them. One really good one is Erin Henderson from Maryland. Another one is Ben Moffit from South Florida. I feel like Moffit can be that hybrid sub package guy. Remember him? He was that guy everybody was furious that he got snubbed for an annual linemen award finalist listing when James Laurenitis got on the list.Other LB's are Ali Highsmith from LSU and Wesley Woodyard from Kentucky.
